Sunday: Tuscan Stew

·        (cannellini beans, zucchini, tomatoes, carrots, kale, broccoli, chicken broth, garlic, oregano, thyme, paprika, onion, EVOO)

·        Pumpkin cornbread

 

Monday: Pesto Shrimp

·        Seared fingerling potatoes (onion, fingerling potatoes, EVOO)

·        Roasted Asparagus

 

Tuesday: Mushrooms Cakes with Avocado Pesto and Bell Pepper Coulis

·        (mushrooms, whole wheat read crumbs, egg, EVOO, basil, oregano, parmesan, garlic, pine nuts, avocado, cilantro, lime, bell pepper, honey, milk, onion)

·        Quinoa (quinoa, onion, EVOO, chicken broth)

·        Roasted Brussels sprouts

 

Wednesday: Quail Jambalaya

·        (quail, brown rice, carrots, onion, mushrooms, bell pepper, basil, oregano, parsley, EVOO, garlic, scallions)

·        Sautéed Kale

·        Salad (romaine, avocado, carrots, cucumber, purple onion, bell pepper, balsamic vinaigrette)

 

Thursday: Barley with Roasted Veggies

·        (barley, beets, turnip, parsley, thyme, EVOO)

·        Sliced pear

·        Tossed green salad (romaine lettuce, carrot, red bell pepper, mushrooms, lemon vinaigrette)
