Check out these healthy carrot recipes by my daughter Lucie!

Roasted Carrots- serves 4

8 carrots

2 tbsp. EVOO

1 tsp. salt

1 tsp. pepper

Preheat the oven to 400 degrees F. Slice the carrots diagonally in 1-2 inch slices. Place in a sheet pan and coat with EVOO, salt, and pepper.

 

Carrot Ginger Salad- serves 4

6 carrots, peeled and grated

1 tbsp. seasoned rice wine vinegar

1 tbsp. sesame oil

1 tbsp. chopped fresh ginger

2 tbsp. sesame seeds

salt and pepper to taste

In a bowl combine all ingredients. Toss to coat.
